Ranch Potatoes

Ingredients:
  1. 2.5 lbs red potatoes (quartered if they're big)
  2. 1 packet dry Ranch dressing mix
  3. 1 c. sour cream
  4. 1 can cream of chicken soup
Instructions:  Combine all ingredients in crock pot.  It takes about 3 hours in mine to cook on low.

I made these potatoes this week and they are so yummy!  We ate them with salad (the sauce also doubles as salad dressing).  I think they would be good with summertime food, like fruit salad and BBQ. 

This dish is a little pricier than what I typically go for - about $2 for the potatoes, $2 for the dry dressing, $1 for the sour cream, and $0.75 for the soup, which comes to about $6 dollars total in the dish.  That's an expensive meal in my book, but when considered a treat, it looks pretty affordable.  :)

  1. Sounds yummy! I'm going to try it. I'm sure you got more than one meal out if it, yes? So that keeps the cost down, too.

  2. Yeah, I got two meals - I think we used it as a side dish the first time and as the main course (aka leftovers :) ) the second. It did make quite a bit, I thought! Let me know how you like it. :)

  3. The following recipes may help you cut your costs even more.

    Western Ranch Seasoning Mix from a Goat Cheese Cookbook I own:
    2 T. seasoned salt 1 t. black pepper
    2 T. parsley flakes ½ t. onion powder (you can powder your dehydrated onions)
    1 t. garlic powder
    Mix seasonings in a jar with a tight fitting lid. Shake well. Keeps well in the pantry. This seasoning mix can be used to make a Western Style Ranch salad dressing by mixing 3 t. of the mix with 1 cup each mayonnaise and buttermilk.

    I just found this one on the web and it is more practical for always having on hand. We usually make a rue to the thickness desired, but I like this better:

    My friend Kim shared this recipe for making your own Cream of _____ Soup. Fill in the blank with the flavoring you give it. When it’s time to cook, you can add a little onion, or dried onion from Sams Club. You can add some dried mushrooms from Sams. Use beef bouillon instead of chicken. Add chopped celery or celery seasoning. Varieties are endless.

    Cream of ___ Soup
    (makes enough for equivalent of 9 cans)
    2 cups nonfat dry milk powder
    3/4 cup cornstarch
    1/4 cup bouillon granules
    Seasoning of choice, examples follow:
    1/2 tsp dried thyme
    1/2 tsp dried basil
    1/4 pepper
    Or Chicken seasonings (marjoram, thyme, salt)
    Mix in an airtight container with a wire whisk until well combined. Store in airtight container.
    To prepare:
    For the equivalent of 1 can combine:
    1/3 cup dry mix and
    1 1/4 cup water or broth.
    Heat mixture in microwave for 2 minutes, stirring every 30 seconds, or on stove top to soft boil, stirring continuously. To make the soup extra creamy substitute milk for water, and heat just to boiling if using stove top.

    Also, we frequently, much to Maggie's chagrin, use plain yogurt instead of sour cream. I was told to not add sour cream until the heat is turned off or else the flavor changes or something like that.
