Pumpkin Cake

I took a chance last week and experimented on guests (thanks, Joel & Amber!) by subjecting them to pumpkin cake.  I was having a very busy week and didn't get a chance to fix a dessert until about an hour before they came, and I didn't have many ingredients.  I did have canned pumpkin and really wanted to make a fall-ish dessert (because even if the weather won't cooperate, it's still fall).

Pumpkin Cake
Ingredients:
  • 15 oz. can of pumpkin
  • Cake mix (I used a yellow cake mix)
  • 2 eggs
  • Cinnamon and nutmeg to taste
I just mixed everything up with a wooden spoon because my beaters were dirty, and baked it in a bundt pan at around 350* until a knife came out clean.  I didn't keep track of the time because Joel and Amber were here then.  =P

It came out really well!  I think that, next time, I'll put a can of condensed milk in to make it a little more moist.  Justin likes his cake practically moist enough to qualify as pudding.  If I remember, I'll post to let you all know how it went.

    The cake sounds delicious! I want to try it, but no one around here but me likes pumpkin, and I should NOT eat a whole cake myself. Not that I don't want to, though . . .

  4. Also, just a thought, but it probably freezes fine. You could make one, cut it up, wrap the pieces, and freeze them for special treats. =)
